Peanut Butter Blossoms

It was my birthday yesterday and I’m not going to lie, it was pretty depressing…. Twenty-two years old.

I was planning on making these really cute and festive cupcakes for the occasion, but then I got sidetracked with pedicures and cranberry margaritas.So those are just going to have to wait!

Since it was my birthday, I decided to share a few details of my life with you all… Mostly because I don’t have anything to write about, but also because I am positive you’re all just dying to know.

Get Inside My Head:

  1. Peanut Butter Blossoms are my favorite holiday cookie… But it has to be the perfect ratio of cookie to Kiss.
  2. I brush my teeth at least three times a day for 3-5 minutes each time.
  3. I slept in my parents bed until I was 10… (Not really proud of that one)
  4. I HATE jicama. And crepes.
  5. I do not own an iPod.
  6. I went to speech therapy every day from the moment I began talking to the beginning of middle school.
  7. The only show I watch is Friends. I am obsessed.
  8. Sometimes, OK, a lot of the times, I wish I was a mermaid.
  9. I have the shortest attention span ever. Just ask anyone who has ever tried watching a movie with me… Or even a TV show for that matter.
  10. I love making schedules and lists. (Hence why I’m making one for my birthday 😉)

Peanut Butter Blossoms recipe slightly adapted from Joy of Baking:

Peanut Blossom Cookies:

½ cup unsalted butter, room temperature

¾ cup peanut butter

1/3 cup light brown sugar

1/3 cup granulated white sugar

1 large egg

1 teaspoon pure vanilla extract

2 tablespoons heavy cream

1 ½ cups all purpose flour

1 teaspoon baking soda

¼  teaspoon salt


1/3 cup granulated white sugar


48 Chocolate Kisses, unwrapped

  1. Preheat oven to 375 degrees F (190 degrees C) and place rack in the center of the oven.
  2. Line three baking sheets with parchment paper.
  3. In the bowl of your electric mixer (or with a hand mixer), beat the butter until creamy and smooth. Add the peanut butter and sugars and beat until light and fluffy (about 2 – 3 minutes). Add the egg and vanilla extract and beat to combine. Beat in the heavy cream. In a separate bowl whisk together the flour, baking soda, and salt. Add to the peanut butter mixture and beat until incorporated. Cover and chill the batter for about an hour, or until firm enough to roll into balls.
  4. Roll the batter into 1 inch (2.5) round balls. Place the granulated white sugar in a shallow bowl and roll each ball in the sugar. Place on the prepared baking sheet, spacing about 2 inches (5 cm) apart.
  5. Bake the cookies for about 8 – 10 minutes, or until the cookies are lightly browned. Immediately upon removing the cookies from the oven, place a unwrapped Chocolate Kiss into the center of each cookie, pressing down gently until the cookie just starts to crack. Cool completely on a wire rack.

Makes about 4 dozen cookies.

    Don’t know what looks better, the cookies or the cute pup. These are one of my favorite as well but don’t forget chocolate dipped biscotti!
